Raw Vegan Peanut Butter Cups

Lets talk Candy. I don't remember the last time I ate a piece of candy. It really grosses me out and is unfortunately FULL of GMOs. Things like Kitkats, Reesse's, Snickers and all of those are full of artificial and fake ingredients that bring destruction to your body...but really lol. So for Valentines Day I wanted to make a sweet treat that was full of antioxidants and on the better for you side of things. So TA-DAH! Out came these Vegan raw peanut butter cups, my husbands absolute favorite! I adjusted a few things from a few different recipes and thought I would share here. 

What you'll need! 

  1. 3/4 Cup Cacao (not to be confused for COCOA)
  2. 1/3 Cup Coconut Oil (I used more because we are obsessed with coconut oil)
  3. 1/2 Cup PURE maple Syrup (has to be PURE for nutritional reasons. non pure maple syrup is usually ALL High Fructose Corn Syrup YUCK)
  4. 4 table spoons Raw peanut butter or normal if you aren't shooting for fully raw
  5. 1 teaspoon Pure Vanilla Extract
  6. Small or large cupcake baking cups

Combine softened coconut oil, maple syrup and cacao and mix until smooth. Pour desired amount into bottom of baking cups. Mix peanut butter and vanilla extract together and then pour a glob in the center of the chocolate cups. Cover peanut butter with remaining chocolate and freeze for 2 hours.  Depending on the size cups you use you might have to double the chocolate but could always use less maple syrup. I had to make more chocolate because I made mine HUGE and full of peanut butter. We stored these in the freezer until they were gone.

A note about Cacao:

"Cacao is the purest form of chocolate you can consume, which means it is raw and much less processed than cocoa powder or chocolate bars. It has been used throughout many cultures for years for health purposes and even used as a high trade commodity

Cacao powder contains more fiber and calories than cocoa powder since more of the nutrients from the whole bean are still intact. Cacao is an excellent source of monounsaturated fats, cholesterol-free saturated fats, vitamins, minerals, fiber, natural carbohydrates, and protein that make it an excellent source of nutrients."

A note about PURE maple Syrup:

"The glycemic index score of maple syrup is about 54, compared to a score of about 65 for regular cane sugar.  This means that one benefit of maple syrup nutrition is that it impacts your blood sugar levels less drastically than table sugar does. Maple syrup also supplies some trace minerals and antioxidants, while sugar lacks both of these."
