All I care about is food this week & these ice cream sandwiches have been on repeat. Im an ice cream sandwhich freak I'm not sure why I haven't made these sooner! I've said it before but I really need to write down recipes and fail to do so each time. This is a super adjustable and easy recipe that just takes a little bit of preperation.
- 3 1/2 cups Oats
- 1 table spoon coconut oil ( liquid not solid)
- 1/2 tsp cinnamon
- 3 frozen bananas and 1 non frozen bananas
- 3 heaping table spoons of peanut butter. (almond butter would be quite delicious)
- 10-15 Dates
- 1 1/2 tsp Vanilla
- optional any nut
- optional cacao nibs.
Start by blending dates in a food processor or vitamix until jelly like. If you are using a vitamin try adding a tiny bit of water to get things going.
Combine oats, blended dates, coconut oil & 2 large table spoons peanut butter. Stir well and add 1/2 tsp. vanilla and cinnamon. This is where you can decide to add nuts, or more peanut butter. Mixture should taste like peanut butter and jelly. If you are having a hard time getting them to stick together add a little bit more coconut oil.
Form cookies into large or mini circles and place in freezer.
Second: In a blendor or food processor add 3 frozen bananas, 1 fresh banana and 1/2 teaspoon vanilla. Blend until there are no chunks and it is creamy. Add the remaining heaping table spoon of peanut butter and the cacao nibs if you are using them. Blend well. (don't be discouraged if your blender is giving you a hard time you can try adding another softer banana and that should do it.)
Once there are no chunks place the "ice cream" mixture into the freezer. I let mine sit for 2-3 hours. I take out the ice cream 10-15 minutes before I want to make the sandwiches. Once the cookies are hardened I combine the ice cream onto the cookies and smash down. If you find that your ice cream is to melted once you place it on the cookies place back in a freezer for a few minutes to harden up.
These are husband approved! I recommend making a big batch!
